Winter is here again, which means short days and long dark nights. The bitter cold sets in making it very unappealing to venture out into the frigid air. Lounging by a warm fire eating hot soup sounds more appealing to the imagination than going to work or running endless errands. So, after fighting the crowds at the grocery store and bringing home the purchases, what is on the menu tonight to fulfill the fantasy of sitting around the toasty fire sipping tantalizing soup? The coconut milk produces a magnificent texture that entices the taste buds. With coconut milk, potatoes, celery, carrots, paprika, salt, pepper, cornstarch, and water, soup will be on the table after the fireplace is rocking with warmth.
